CARROTS

Carrots grow best in loose, porous soil.  Varieties grow from 2 inches to 11 inches and should be a staple in any small space garden.  A 4'x4' bed will produce a whole season's worth of carrots per person if you sow every 2 weeks.  Karen admits you've got to love carrots to use an entire bed for them.

Large Smooth Prague:

Red Ribbed Dandelion-Leaved

Radicchio refers to the red chicories.

Castelfranco Variegated:  OP Heirloom 80 days.  Italian variety.  Round slightly open heads have creamy white leaves splashed with violet and burgundy.  NIC

Early Treviso: 
OP 60-65 days.  A very tidy and compact head of salad-sized leaves are in shades of crimson and pink with bold white midrib.  BOU

Rouge De Verone (Verona Red):  OP Heirloom 85 days.  Red-green colored radicchio, if cut back in spring, will produce clusters of small apple size heads.  NIC SOU 

COLLARDS

Even' Star Land Race Collards: 
OP.  Vigorous, winter-hardy.  Small leaves.  Tolerant to a wide range of soils and drainage conditions.  Best for fall planting.  SOU

Georgia Green (Georgia Souther, Creole):  Heirloom OP.  Especially valuable for sandy soil.  Open, loose heads are best harvested after frost when they are sweet and tender.  36" plants.  BURP HEN SOU

CORN 

Corn has to be planted in blocks and is not a good vegetable to grow in a small space garden, although it can be done.

Ashworth:  OP 69 days.  Ears are 6-7" long.  5' stalks.  12 rows of yellow kernels per ear.  SOU

Black Mexican (Mexican Sweet, Black Iroquois):  Heirloom OP 76 days.  The kernels are white at milk stage, change to bluish-black in the late milk stage.  7 1/2" x 1 1/2" ears with 8 rows of kernels. SHU SOU

Buhl:  OP 81 days.  6-7' stalks bear 2 ears with yellow kernels. SOU

Trucker's Favorite: 
Heirloom OP 80 days.  Roasting white corn.  Heat and drought-resistant.  8-10 ears.  If left to dry it can also be ground into homemade cornmeal.  HEN


CORN (Baby corn)

Baby Corn:  OP 65 days.  Grow tiny ears of corn in your own garden.  Not a sweet corn, but excellent for pickling.  Tender finger-sized ears are entirely edible and delicious.  Good freezer.  NIC SHU

Black Aztec:  OP Heirloom.  Kernels are white-purple at eating stage and turn gray-black at maturity. ABU VER

Bloody Butcher:  Heirloom 110 days.  8-10" ears of deep red with darker accents.  8-12' stalks.  Ornamental corn that can be eaten if picked young.  Also good for flour and cornmeal.  VER

Earth Tone Dent:  Heirloom 90 days.  Dent corn with earth tone shades including greens, blues, golds and pinks.  8-10" ears.  Flour corn.  8-10' stalks.  VER

Hickory King White:  OP Heirloom 115 days.  A dent corn used for hominy, corn nuts or cornmeal.  8-9' plants produce small 7-8" cobs with huge creamy white kernels.  BOU

Hopi Blue: 
OP Heirloom 75-110 days.  An Indian flint corn ground into flour by the Hopi pueblo people.  Bushy 5' stalks bear 8-10" ears filled with smooth blue kernels.  BOU


Rainbow (Indian Flint, Squaw):  OP Heirloom 105 days. A hard flint corn used for grinding into corn meal.  GUR HEN NIC SHU

Yard Long Armenian (Armenian):  OP Heirloom 65 days.    Can grow to 3' long, pale green, ribbed fruit with thin skins.  Best picked at 12" and cucumbers are about 2-3" in diameter. ABU BURP NIC PLA TER
